To play, each player and the dealer receive seven cards to form two hands: a five-card 'Poker Hand' and a two-card 'Pai Gow Hand.' The goal is to beat the dealer's hands. Players arrange their cards to create the highest possible Poker Hand and the best Pai Gow Hand. The dealer then does the same. If both of the player's hands beat the dealer's, they win. If one hand wins and one loses, it's a push. Fortune Pai Gow Poker includes a Fortune Bonus side bet, which pays based on the Poker Hand's rank, adding an extra layer of excitement.
